Ingredients
- 3 - 3 1/2 cups button mushrooms, sliced
- 1 tablespoon butter (or olive oil)
- 1 tablespoon garlic, finely chopped
- 1/2 teaspoon fresh thyme (or dried thyme)
- 1/2 cup dry white wine
- 1 cup heavy cream
- 1/2 cup Parmesan, freshly grated
- 1/2 - 1 cup broth (vegetable broth or chicken broth)
Here's how to make it:
- Heat the butter or olive oil in a saucepan over medium-high heat. Add the mushrooms and cook, stirring often, until golden brown and softened, about 5 minutes. Add the garlic and thyme and cook for 30 seconds.
- Add the wine and cook, stirring, until it reduces by half, about 3 minutes.
- Turn the heat to low. Add the heavy cream and Parmesan. Stir until cheese has melted and incorporated into the cream.
- Add enough broth to reach your desired consistency. Start with 1/2 cup and add more if needed. Season the sauce with salt and black pepper. Serve as desired. Store any leftover sauce in an airtight container in the fridge.
