Norwegian Waffles Recipe: This European Waffle May Steal Your Heart (8 Ingredients) by 30Seconds Food

We've all heard of Belgian waffles, but what about Norwegian waffles? Norwegian waffles (vaffel) are thin waffles that are most often, in Norway, heart-shaped using a heart-shaped waffle iron. The thin European waffles are soft, a little sweet and traditionally flavored with cardamom or other baking spices. While waffles in America are usually eaten for breakfast, these waffles are usually eaten as a snack or served on special occasions. Toppings vary, but brown cheese (brunost) is a favorite topping on the waffles or jam, butter or sour cream.

According to Life In Norway, "Despite being widely available and universally celebrated in the country as one of the most Norwegian things ever, waffles did not actually originate in the land of the Vikings. We know that waffle irons were first used in Europe in the 14th century, and likely made their way to Norway from Germany, the Netherlands or Belgium. The earliest waffle recipe documented in Norway dates from the 18th century. Since it included expensive ingredients such as butter, sugar and cream, it was likely a treat reserved for special occasions, such as weddings."

Norwegian waffles are easy to make, but do require about 30 minutes of rest time before pouring into the waffle iron. Here is your shopping list for this fun waffle recipe: flour (all-purpose or  gluten-free), granulated sugar, baking powder, salt, eggs, buttermilk, vanilla extract, baking spices (cardamom is traditional) and unsalted butter. 

Serve these waffles like the Norwegians do, as a slightly sweet snack with sour cream or butter and jam (usually raspberry or strawberry in Norway) or add your favorite toppings and enjoy for breakfast, brunch or even dessert.

Ingredients

• 2 cups all-purpose flour (or 1:1 gluten-free flour)
• 1/2 cup granulated sugar
• 1 teaspoon baking powder
• pinch salt
• 4 large eggs
• 2 cups buttermilk
• 1 1/4 teaspoons vanilla
• sprinkle of cardamom, ginger, ground cloves, cinnamon or nutmeg (or a combination), to taste
• 1/4 cup unsalted butter, melted, plus more to oil the waffle iron

Here's how to make it: 

1. Whisk together the flour, sugar, baking powder and salt in a bowl. 
2. In another mixing bowl, whisk together the eggs, buttermilk, vanilla and desired spices. 
3. Add the dry ingredients to the wet ingredients. Stir until just combined. Do not overmix.
4. Slowly stir in the melted butter. Do not overmix.
5. Cover the bowl with a kitchen towel or plastic wrap and let it sit for 30 minutes.
6. Brush the waffle iron with melted butter and preheat. Once hot, pour in about 1/2 cup of the batter and spread it out. (Use a spatula.)
   
7. Cook the waffle for about 3 minutes or until golden. Cooking time will vary, depending on how hot your waffle iron gets. Serve the waffles hot with desired toppings.
