I love a good hamburger, but unfortunately they are very difficult to find at a reasonable price. I purchased a case of Rastelli's Wagyu burgers from Costco and found them incredible. They are a mixture of short ribs and chuck and simply melt in your mouth. I wanted to make them even better and this bacon jam recipe did the trick.
Keep in mind this jam is sweet, so you will need to add some salt to the hamburgers before grilling. I put a good dose of Montreal Steak seasoning on mine. I also used a high-quality white cheddar cheese from the deli. All together this gave a great array of flavors to my hamburgers.

Ingredients
- 6 slices thick-cut bacon or 12 slices regular bacon, cut into 1/2-inch strips
- 1 small yellow onion, roughly diced
- 3 teaspoons minced garlic (3 cloves)
- 1/4 cup apple cider vinegar
- 1/4 cup bourbon
- 1/4 cup maple syrup (real maple syrup is preferred)
- 1/4 cup brown sugar
Here's how to make it:
- Slice the bacon into 1/2-inch chunks and cook in a cast iron skillet until it is crispy. Remove bacon and keep about 2 tablespoons of the bacon grease in the skillet.
- Add the onion and minced garlic. Sauté until the onion browns. Add the apple cider vinegar and deglaze the skillet. Add the bourbon, maple syrup, brown sugar and the bacon to the skillet. Heat at medium-low until the mixture starts to bubble. Cook for 10 to 15 minutes, or until the mixture thickens. Keep in mind that when this cools it will be substantially thicker.
- Serve on your favorite hamburgers or on a toasted piece of artisan bread, or however you like bacon jam!
- Store the jam in a mason jar or airtight container in the fridge.
