Mushrooms are one of my favorite vegetables, or technically, fungi. Yes, these delicious gems are not really vegetables, but a fungus that's not considered a plant. Whatever you want to call them, mushrooms are such a great side dish or ingredient in recipes. This sauteed mushrooms recipe with caramelized onions is so simple to make, and is rich and full of flavor.
There are about 300 edible mushroom species, and 10 of them are grown commercially and show in in our produce departments and farmers markets. And of all the produce in the produce section, mushrooms have the highest amount of selenium, and that's just one of the health benefits of mushrooms.
You only need four simple ingredients to create this high-protein skillet mushrooms and onions recipe. Here is your short gluten-free shopping list for this side dish recipe: fresh mushrooms, butter, olive oil and onion (check out the health benefits of onions). The fungi and onion cook over a moderate heat in a skillet until they are golden and caramelized. Yum!
Serve the golden mushrooms mixed with caramelized onions as a side dish with any protein for dinner. You can also toss them into pasta dishes, grain bowls, salads or use them as a topping for steak, chicken or even baked potatoes. Delish!

Ingredients
- 2 tablespoons butter
- 1 tablespoon olive oil
- 8 ounces fresh mushrooms, sliced
- 1/2 an onion, sliced
Here's how to make it:
- Heat the olive oil and butter in a saucepan or skillet over medium heat. Add the mushrooms and onions. (For a vegan side dish, use all olive oil and omit the butter, or use vegan butter.)
- Cook, stirring often, until mushrooms are golden, onions caramelized and any liquid from the mushrooms has evaporated. Cooking time could take anywhere from 10 minutes to 20 minutes, depending on your stove and type of pan. You can add more butter and/or olive oil, if needed. Season with salt and black pepper, to taste.
- Serve. Store the mushrooms in an airtight container in the fridge.
