Here's what to grab from your fridge and pantry for this chicken dinner: boneless/skinless chicken breasts, olive oil, lemons for juicing, panko (regular or gluten-free), lemon pepper seasoning, garlic powder and dried Italian seasoning.
These moist and juicy boneless chicken breasts are wonderful served as a high-protein dinner with your favorite side dishes. The chicken breasts are also fantastic for meal-prepping and can be used on salads or even chopped up for a lemony chicken salad.

Ingredients
- 6 boneless/skinless chicken breasts, pounded to an even thickness
- 2 tablespoons olive oil (or melted butter)
- 1/4 cup lemon juice
- 1/2 cup panko (regular or gluten-free panko)
- 1 tablespoon lemon pepper seasoning
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
Here's how to make it:
- Stir together the lemon juice and olive oil in a shallow bowl. In another bowl, stir together the panko, lemon pepper seasoning, garlic powder and dried Italian seasoning. (For gluten-free chicken, use-gluten-free panko. Fresh is best, so squeeze the lemon juice if you can.)
- Dip the chicken into the lemon-oil mixture and then into the panko, pressing to adhere the panko to the chicken. Place in an oiled baking dish. Repeat with the remaining chicken. Sprinkle the top of the chicken with salt and black pepper, to taste. (If there's any of the lemon juice/olive oil mixture left, drizzle it over the top.)
- Bake in a preheated 375-degree F oven for about 15 to 20 minutes, flipping the chicken over halfway through the cooking time. Bake until chicken is golden, crispy and cooked through. Chicken is cooked through at 165 degrees F internal temperature on a food thermometer. Serve garnished with fresh lemon slices, if desired. Store the chicken in an airtight container in the fridge.
- To cook in an air fryer, preheat it to 350 degrees F. Cook the chicken for about 18 to 20 minutes, or until cooked through.
