I've got a fun "dessert for breakfast" idea. Cheesecake in the morning? Why not?! Especially when it's these nutritious and delicious creamy high-protein banana "cheesecake" breakfast bars. And they're easy to make, too!
This rich and creamy high-protein banana breakfast bars recipe was inspired by this high-protein berry breakfast casserole recipe. It tastes kind of like cheesecake (yep, "cheesecake" for breakfast!), and it contains my favorite ingredients for added protein: Greek yogurt and cottage cheese. To make this gluten-free banana breakfast bake recipe, here are the eight wholesome ingredients you need to gather: cottage cheese, plain Greek yogurt, eggs, brown sugar, oat flour, vanilla extract, cinnamon and overripe bananas (check out the health benefits of bananas). The chopped walnuts are optional. You combine the ingredients then bake it up until cooked through and golden brown.
Serve these delicious bars for breakfast or as an elegant brunch alongside some fresh berries. Top them with whipped cream for a lovely dessert, or grab one for a quick boost of protein when you need a nutritious snack throughout the day.

Ingredients
- 1 1/4 cups cottage cheese
- 1 cup low-fat plain Greek yogurt
- 4 large eggs
- 1/3 cup light brown sugar
- 1 1/2 teaspoons vanilla extract
- 3/4 cup oat flour
- 1 1/2 teaspoons ground cinnamon
- 3 overripe bananas (about 1 1/4 cups), mashed
- 1/2 cup chopped walnuts (optional)
Here's how to make it:
- In a blender, add the cottage cheese and whip until creamy, about 30 seconds (you also can use an immersion blender in a mixing bowl, which is what I did). In a large mixing bowl, add the whipped cottage cheese, Greek yogurt, eggs, brown sugar and vanilla. Whisk to combine. (If you like your bars sweeter, you can add a bit more brown sugar.)
- Add the oat flour and stir to combine. (Oats are naturally gluten-free, but to be sure, use gluten-free oat flour. You can buy oat flour or make your own oat flour by putting rolled oats into a blender for about 30 seconds.)
- Fold in the mashed bananas. Fold in the walnuts, if using.
- Pour the mixture into a baking pan or casserole dish that's been sprayed with cooking spray. (I used my medium-sized Le Creuset casserole dish, which measures 10x8 inches.)
- Bake in a preheated 350-degree F oven for 30 to 40 minutes, or until cooked through and golden. Allow to cool before slicing and serving.
- Serve with fresh berries or with whipped cream and a sprinkle of cinnamon, if desired. Store leftovers in an airtight container in the refrigerator.
