If you like bourbon-flavored desserts, then I've got a great new recipe for you! This rich bourbon "ice cream" recipe is absolutely delicious. But beyond being delicious, this creamy frozen dessert also packs a protein punch, thanks to a secret ingredient: ricotta cheese.
This super creamy bourbon ice cream is made with light and airy ricotta cheese, which adds not only healthy protein but also a slightly sweet flavor and smooth texture that makes it perfect for desserts. Ricotta is one of my favorite secret ingredients not only because it's so rich and creamy, but also because it's packed with protein and nutrition. In fact, it's considered one of the world's healthiest cheeses, often said to be a lighter version of cottage cheese.
After making this super creamy strawberry ricotta cheesecake ice cream recipe, I wanted to try it with bourbon because my family went crazy for this decadent bourbon whipped cream recipe. This recipe is a cross between those two. This simple ice cream recipe is made with just four ingredients and has a prep time of only about five minutes (with no ice cream maker needed). The hardest part is waiting for it to freeze so you can dig in.
This gluten-free ice cream is so easy to make and only requires four ingredients: ricotta cheese, bourbon, light brown sugar and vanilla extract. You combine all the ingredients in a blender then freeze before serving.
You'll be amazed by how similar ricotta cheese ice cream is to actual ice cream. It's perfect for scooping into cones or serving in bowls with your favorite ice cream toppings (hello, hot fudge). This sweet treat would make a delicious addition to pies, cakes or brownies. But, if you just want a bite of something special, it's incredible on its own!

Ingredients
- 2 cups ricotta cheese
- 2 tablespoons bourbon
- 3 tablespoons light brown sugar
- 1 teaspoon vanilla extract
Recipe Notes
- Freeze the ice cream for at least four hours (or overnight) before serving.
- Serve the ice cream in a cone or in a bowl. Topping ideas include chopped nuts, chocolate chips, chocolate sauce, hot fudge, etc.
- Store leftover ice cream in an airtight container in the freezer.
- For ice cream that has been frozen overnight, allow the ice cream to thaw at room temperature for a bit before scooping and serving.
Here's how to make it:
- Place all ingredients into a blender.
- Blend until smooth.
- Pour the mixture into a freezer-safe container.
- Freeze for at least four hours or until it firms up (I froze mine overnight).
- Serve in a cone or in a bowl on its own, or with your favorite ice cream toppings.
