These pancakes are kind of like a crepe, so they roll up easily and can be stuffed with all kind of ingredients – from fruit to nut butter to cream cheese. This easy pancake rolls recipe is fun to make with the kids.

Ingredients
- 1 cup baking mix
- 1 egg
- 1/2 teaspoon vanilla
- 3/4 cup milk
- butter, for cooking
Fillings
- fruit preserves
- lemon curd
- hazelnut spread
- nut butter
- honey
- whipped cream cheese
Here's how to make it:
- Combine the baking mix, egg, vanilla and milk in a bowl.
- Heat a little butter in a small skillet. Add about 1/8 cup of the batter to the pan and swirl to coat. Cook until bubbles appear, then flip and cook on the other side. Remove to a plate. Repeat with the remaining batter.
- Fill each pancake with desired filling. Roll up. Pour more of the filling over the top, if desired.
