Ingredients
- 2 pounds carrots, peeled, if desired and cut into 1-inch pieces
- 3 tablespoons butter
- 2 tablespoons honey
- 2 teaspoons lemon juice
- 1/2 teaspoon cinnamon
- 1/2 teaspoon kosher salt (optional)
- 1/4 teaspoon black pepper (optional)

Recipe Notes
- If seasoning with kosher salt, start at 1/2 teaspoon then taste it and see if you would like more. You can go up to as much as 1 teaspoon.
- Fresh lemon juice is best, but you can use bottled lemon juice, if desired.
- Garnish with additional butter, and fresh parsley, if desired.
- Store leftovers in an airtight container in the refrigerator.
Here's how to make it:
- Boil the carrots for approximately 15 minutes or until soft. Strain.
- Place carrots into a large mixing bowl and mash with a potato masher.
- Add butter, honey and lemon juice. Mash carrots once more. (If you want the carrots to be super smooth, you'll need to use a blender or food processor).
- Season with cinnamon, and salt and pepper, if desired. Mix to combine. Serve immediately.
