Once I figured this out, I became obsessed with sweet potatoes and started using them in all sorts of recipes – like this mouth-watering sweet potato muffins recipe. The muffins are so moist, rich and satisfying. Once you try them, you'll wonder why you never made sweet potato muffins before. This delicious sweet potato muffins recipe is similar to pumpkin muffins or maybe even banana muffins, but I actually prefer it to those.
Sweet potatoes are amazing. Studies have shown that sweet potatoes may help lower cancer risk, help increase gut health, help control blood sugar, help lower cholesterol, help prevent macular degeneration, help lower inflammation and more. All this, along with helping to add moisture and sweetness to a variety of recipes naturally. How great is that?
Here are the nourishing ingredients you'll need to make these decadent muffins any time: sweet potatoes, extra virgin olive oil (check out the health benefits of olive oil), brown sugar, maple syrup, plain Greek yogurt (check out the health benefits of Greek yogurt), eggs, vanilla extract, baking soda, cinnamon, nutmeg, salt and flour (all-purpose or gluten-free). The chocolate chips and chopped pecans are optional but add flavor and texture (along with the health benefits of pecans). You mix up the batter in one bowl (another plus), spread it into a muffin pan then bake up the marvelous muffins until your mouth starts to water.

Ingredients
- 1 1/2 cups cooked sweet potatoes, mashed (I boiled mine then let them cool a bit before mashing)
- 1/2 cup extra virgin olive oil
- 3/4 cup light brown sugar (or cane sugar)
- 3 tablespoons real maple syrup
- 1/4 cup plain Greek yogurt (or sour cream)
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 1/2 cups flour (all-purpose or gluten-free flour)
- 3/4 cup semisweet chocolate chips (or milk chocolate or dark chocolate chips)
- 3/4 cup chopped pecans (optional)
Here's how to make it:
- In a large mixing bowl, add the mashed sweet potatoes, olive oil, brown sugar, maple syrup, Greek yogurt, eggs and vanilla. Whisk to combine. Add the baking soda, cinnamon, nutmeg and salt. Whisk to combine. (Instead of Greek yogurt, you could use sour cream.)
- Add the flour and stir to combine. (To make this recipe gluten-free, use gluten-free flour.)
- Fold in the chocolate chips and pecans, if using. (Instead of pecans, you could use chopped walnuts.)
- Evenly spread the batter into a muffin pan that's been sprayed with cooking spray, noting that each muffin cup should be filled only three-quarters full.
- Bake in an oven that's been preheated to 350 degree F until cooked through and golden brown, about 18 to 24 minutes (muffins should pass the toothpick test).
- Allow muffins to cool for about 15 minutes before removing to a wire rack to cool completely.
- Serve. Store the muffins in an airtight container to keep them fresh.
