I learned something important recently while researching how to get more fiber into my diet: sweet potatoes are not just for the holidays. In fact, sweet potatoes are a high-fiber superfood that should be eaten year-round. This insanely delicious sweet potato bread recipe makes it easy to do that. In terms of texture and flavor, I guess I'd call it a cousin to pumpkin bread and maybe a second cousin to banana bread. But I like this bread recipe even more than those. In fact, I'd go as far as to say this is the best sweet bread recipe I've ever made. I love it that much! Don't even get me started on my husband's reaction. After the first bite, his jaw dropped. He couldn't stop saying, "this is sooooo goooood!" I wish I would have videotaped it so you could see, haha! But I guess you'll just have to try it and see for yourself.
Here are the wholesome ingredients you'll need to make this amazing bread today: sweet potatoes, extra virgin olive oil (check out the health benefits of olive oil), brown sugar, maple syrup, plain Greek yogurt (check out the health benefits of Greek yogurt), eggs, vanilla extract, baking soda, ground cinnamon, ground nutmeg, salt and flour (all-purpose or gluten-free). The chopped pecans are optional but add some nice crunch (along with the health benefits of pecans). You mix up the batter in only one bowl (yay!), spread it into a loaf pan then bake it up until your kitchen smells like the holidays. What could be better than that?

Ingredients
- 1 1/2 cups cooked sweet potatoes, mashed (I boiled mine then let them cool a bit before mashing)
- 1/2 cup extra virgin olive oil
- 3/4 cup light brown sugar (or cane sugar)
- 3 tablespoons real maple syrup
- 1/4 cup plain Greek yogurt (or sour cream)
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 1/2 cups flour (all-purpose or gluten-free flour)
- 3/4 cup chopped pecans (optional)
Here's how to make it:
- In a large mixing bowl, add the mashed sweet potatoes, olive oil, brown sugar, maple syrup, Greek yogurt, eggs and vanilla. Whisk to combine. (Instead of Greek yogurt, you could use sour cream.)
- Add the baking soda, cinnamon, nutmeg and salt. Whisk to combine.
- Add the flour and stir to combine. (To make this recipe gluten-free, use gluten-free flour.)
- Fold in the pecans, if using. (Instead of pecans, you could use chopped walnuts.)
- Evenly spread the batter into an 9x5-inch loaf pan that's been lined with parchment paper.
- Bake in an oven that's been preheated to 350 degrees F until cooked through and golden, about 50 to 60 minutes, or until it passes the toothpick test. (If the loaf is getting too brown on top, cover it with aluminum foil.)
- Allow loaf to cool a bit before removing to a wire rack to cool completely.
- Slice and serve. Store leftover bread in an airtight container.
