Thanks to sofrito – an aromatic, rich flavor base that's used in many Puerto Rican dishes – this oven-baked pork tenderloin recipe is so savory. Check out the health benefits of sofrito. And, the pork turns out tender and juicy with no searing. Plus, this high-protein recipe is ready to serve in only about 35 minutes (check out the health benefits of protein). Not bad for a budget-friendly dinner on a busy weeknight! No wonder my mom, who's from Puerto Rico, found time to make it for us after getting home from a long day of work as a school teacher.
To make this easy baked pork tenderloin, here are the gluten-free ingredients you'll need to gather: pork tenderloin, extra virgin olive oil, sofrito, sazon seasoning, minced garlic (check out the health benefits of garlic) and smoked paprika. You mix all the ingredients (except the pork) to make the sauce, then you spread it across the top of the pork tenderloin. Cover and bake the pork, then serve it up however you like.
I served this tasty pork tenderloin with Puerto Rican rice and beans and it was just delicious. It's also amazing served as tenderloin sandwiches. Enjoy the Latin flavor!
Cuisine: Puerto Rican
Prep Time: 5 minutes
Cook Time: 25 to 30 minutes
Total Time: 30 to 35 minutes
Servings: 3
Ingredients
- 2 tablespoons extra virgin olive oil
- 1/3 cup sofrito
- 1 tablespoon sazon seasoning
- 1 teaspoon minced garlic
- 1/2 teaspoon smoked paprika
- 1 pound pork tenderloin
- salt and pepper, to taste (optional, but I used about 1/4 teaspoon of each)
Here’s how to make it:
- In a small mixing bowl, combine the olive oil, sofrito, sazon, garlic and smoked paprika. Add salt and pepper, to taste, if desired. Stir to combine.
- Place the pork tenderloin into a baking pan (I lined mine with aluminum foil to make cleanup easier). Evenly spread the mixture over the top of the pork.
- Cover the baking pan with foil and bake in an oven that's been preheated to 375 degrees F until done, about 25 to 30 minutes. Pork is done when it reaches 145 degrees F on a food thermometer.
- Slice and serve, making sure to pour the juices onto the meat.
- Store leftovers in an airtight container in the refrigerator.
