Confession: I do not have TikTok on my phone, and I do not sit and scroll through video after video like a lot of people do. (No judgement here for those who do!) But the other day, I clicked on a video that came through my Facebook feed and was introduced to Mississippi Kween. The simple green peas side dish recipe she made really hit with me: cheese peas.
Green peas (frozen, fresh and canned) are one of my favorite vegetables, and I grew up eating almost all my vegetables coated in a cheese sauce thanks to my grandma (check out this broccoli and cheese sauce recipe). The way Mississippi Kween made the peas was definitely a shortcut recipe and a great idea. She made the cheesy peas recipe with canned peas (love!) and those squares of processed American cheese. Because it's just the two of us and my husband and I don't eat square cheese anymore (no offense to square cheese!), I decided to make my own version of this green peas recipe using what I had at home, which was a Velveeta cheese loaf leftover from our Super Bowl™ get-together. These cheesy peas are so simple to make and so delicious, and this vegetable recipe will be a staple side dish on my dinner table going forward.
Here is your shopping list for this high-protein and high-fiber recipe: frozen green peas, processed cheese (aka Velveeta), butter, flour and milk. That's it. Ingredients
- 2 tablespoons butter
- 2 tablespoons flour (all-purpose or gluten-free flour)
- 3/4 cup milk (I used evaporated milk)
- 3 ounces Velveeta, cut into cubes
- 10 ounces (1 bag) frozen green peas, thawed
Here's how to make it:
- Melt the butter in a saucepot over low heat. Whisk in the flour. Season with salt and black pepper. (For a gluten-free side dish use gluten-free flour.)
- Slowly pour the milk in, stirring. Bring to a simmer and cook, stirring often, about 1 to 2 minutes, or until it thickens up.
- Add the cheese and stir until melted.
- Add the peas and cook until heated through, about 1 to 2 minutes. Serve. Store any leftover peas in an airtight container in the fridge and reheat in the microwave. (You can add a little milk to loosen up the cheese sauce when reheating.)
