Ingredients
- 2 tablespoons extra virgin olive oil
- 2 cups fresh broccoli, diced
- 3/4 cup onion, diced
- 20 ounces (4 cans) canned tuna in water, drained and shredded
- 1 cup small curd cottage cheese
- 2/3 cup almond flour (or your flour of choice)
- 1 teaspoon garlic powder
- 3 eggs
- 1 cup cheddar cheese, shredded
- salt and black pepper, to taste (optional, but I used about 1/3 teaspoon of each)
- fresh basil, for garnish (optional)
Here’s how you make it:
- In a large skillet over medium-high heat, add the olive oil, broccoli and onion. Stir to combine and sauté until crisp-tender, about 4 minutes. Remove from heat.
- In a large mixing bowl, add the tuna, cottage cheese, almond flour, garlic powder, eggs and cheddar cheese. Season with salt and black pepper, to taste, if desired. Stir to thoroughly combine. (You can use your flour of choice, but to ensure this recipe is gluten-free, use gluten-free flour.)
- Add the broccoli mixture and stir to combine.
- Form tuna mixture into patties and place them onto baking sheets that have been lined with parchment paper or sprayed with cooking spray. (The number of patties depends upon the size of patties you form.)
- Bake at 400 degrees F for about 15 to 20 minutes. Remove from oven and flip each patty, pressing down gently with a spatula.
- Bake for 10 more minutes, or until golden brown and crispy.
- Serve patties on their own or with your favorite side dishes. Store leftovers in an airtight container in the refrigerator and reheat in the microwave or oven.
