Ingredients
- 2 cups all-purpose flour or gluten-free flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1 cup ricotta cheese, drained if wet
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 large lemon, zested and juiced
Lemon Glaze
- 1/2 cup powdered sugar
- 2 tablespoons lemon juice, or more as needed
Here's how to make it:
- Add the sugar, butter and ricotta to a large mixing bowl and mix with a stand mixer or electric mixer until smooth. Add eggs, lemon juice and zest and mix on low for 1 minute or until combined.
- Place flour, baking soda and powder, and salt into batter and mix. The batter will be quite thick.
- Divide the batter between 12 muffin cups that have been lined with baking liners or sprayed with nonstick cooking spray.
- Bake in a preheated 350-degree F oven for 21 to 24 minutes, or a toothpick comes out clean. Cool on a wire rack.
- When ready to serve, combine powdered sugar and lemon juice to create glaze.
- Drizzle glaze over the tops of the muffins. Serve. Double this recipe and place 12 in the freezer and you’ll have this delicious sweet treat ready any time you’d like. Store the muffins in an airtight container to keep them fresh.
