Although quiches with crust are totally delicious, when you're looking for simplicity as well as fewer calories, going crustless makes so much sense (and I doubt you'll miss the extra carbs very much). With just nine ingredients, this savory Mediterranean-inspired high-protein quiche recipe is so easy (and delicious). Check out the health benefits of protein.
To make this gluten-free crustless quiche recipe, here are the wholesome ingredients you'll need to gather: olive oil, cherry tomatoes (check out the health benefits of tomatoes), fresh spinach (check out the health benefits of spinach), eggs, milk, onion powder, garlic powder, cottage cheese and feta cheese (here's why feta is one of the healthier cheeses). The shredded cheddar, mozzarella or Parmesan cheese topping is optional. You sauté the vegetables before combining them with the rest of the ingredients. Then you bake it up until cooked through and golden. So simple!
Serve this high-protein, low-carb quiche all on its own for breakfast or for brunch, with a side salad for lunch, or with your favorite side dishes for a wonderful dinner. It's a great addition to a healthier Mediterranean diet!

Ingredients
- 1 tablespoon extra virgin olive oil
- 1 1/2 cups fresh cherry tomatoes
- 5 ounces fresh baby spinach
- 8 large eggs
- 1/2 cup milk or almond milk
- 1/4 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 cup cottage cheese
- 4 ounces feta cheese, crumbled
- salt and pepper, to taste (optional, but I used about 1/4 teaspoon of each)
- 1/2 cup cheddar, mozzarella or Parmesan cheese, shredded (optional topping)
Here's how to make it:
- In a large skillet over medium heat, add the olive oil, tomatoes and spinach. Sauté until tomatoes are soft and spinach is wilted, about 2 minutes. Set aside.
- In a large mixing bowl, add the eggs, milk, onion powder and garlic powder. Add salt and black pepper, to taste, if desired. Whisk to combine.
- Add the cottage cheese and the feta cheese. Stir to combine. Add the vegetables and stir to combine.
- Spread the mixture into a 9-inch pie plate or cake pan that's been sprayed with cooking spray.
- Top with the shredded cheese of your choice, if using.
- Bake in a preheated 350-degree F oven until cooked through and golden brown, about 30 to 35 minutes.
- Allow to cool for a bit before slicing and serving. Store leftovers in an airtight container in the refrigerator or freezer.
