This healthy creamy rosato salmon recipe is adapted by Kyle Libramonte for the Magnifique Claypot Oven. The seafood recipe not only uses healthy salmon, but zucchini, onion and tomatoes. The easy fish recipe is on the table in about 25 minutes.
Here is your shopping list for this high-protein dinner recipe: fresh salmon fillets, lemon pepper seasoning, salt, cream cheese, olive oil, fresh zucchini, onion, white wine, a can of diced tomatoes, dried Italian seasoning, garlic powder and fresh basil.
Serve the moist salmon fillets and creamy vegetables for dinner as a complete healthy meal. You could add a fresh salad as a side dish.

Ingredients
- 1 1/4 pounds salmon fillets, skinned and cut into 4 portions
- 1/4 teaspoon salt
- 1/4 teaspoon lemon pepper seasoning
- 2 tablespoons olive oil
- 1 medium zucchini, halved lengthwise and sliced thinly
- 1/2 cup onion, chopped
- 1/3 cup dry white wine
- 15 ounces (1 can) diced tomatoes (no salt added)
- 2 ounces cream cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 cup fresh basil, chopped
Here's how to make it:
- Preheat the Magnifique Claypot Oven to Sear/Sauté High.
- Pat salmon filets dry and season with salt and lemon pepper.
- Once preheated, add olive oil and then your salmon.
- Cook the salmon until browned on both sides and opaque in the middle. Set aside.
- Add onions and zucchini to your Claypot, season with salt and pepper, and Sauté until softened.
- Add white wine and cook until the liquid has mostly evaporated.
- Once evaporated, add in the tomatoes, cream cheese, Italian seasoning, garlic powder and season once again to your liking.
- Mix well and continue stirring until the cream cheese has melted and the sauce is to your desired thickness. Place your salmon back in the Claypot on top of the sauce.
- Add some fresh basil for a garnish, serve and enjoy!
