Nachos are always a fan favorite. This chorizo and corn nachos recipe is from the cookbook The Blackstone Griddle Camping Cookbook. Chorizo. Corn. Cheese. Chips. How can you go wrong for your camping trip, tailgating party, gameday get-together or just Monday night for dinner?
These nachos can be a late-night snack or even a fun dinner because there are no rules when it comes to meals at the campsite. Add toppings such as jalapenos, salsa, shredded lettuce or pickled red onions if you’d like.
To make this cheesy homemade nachos recipe you will need only six simple ingredients. Here is your short gluten-free shopping list: ground Mexican chorizo, a can of whole kernel corn, a bag of tortilla chips, Monterey Jack cheese, a jar of queso blanco (or your favorite homemade queso) and sour cream. Don't have a Blackstone? Make the grill recipe in a cast iron skillet or regular nonstick skillet.

Ingredients
- 1 pound ground chorizo
- 15 ounces (1 can) corn, drained
- 13 ounces (1 bag) corn tortilla chips
- 4 cups shredded Monterey Jack cheese
- 15 ounces (1 jar) queso blanco (or homemade queso)
- 1 cup sour cream
Here's how to make it:
- Preheat griddle to medium. Add chorizo and cook 5 minutes, breaking meat apart with spatulas.
- Add corn and cook 2 more minutes, mixing. Remove from griddle and lower heat to medium-low.
- Spread tortilla chips in a single layer on griddle, overlapping slightly. Sprinkle half of cheese, half of chorizo-corn mixture, queso, remaining half of cheese and then remaining chorizo-corn mixture over chips.
- Lower griddle lid or cover with melting dome 5 minutes or until cheese is melted.
- Drizzle or dollop sour cream over top before serving.
