This easy six-ingredient cucumber basil sauce recipe features English cucumber and sweet Italian basil, two ingredients that smell as fresh as they taste. Ingredients

• 1 cup cucumber (about 1 medium cucumber), in chunks
• 1/3 cup fresh basil leaves
• 2 scallions
• 1 cup plain Greek yogurt
• 1 teaspoon minced garlic
• 2 tablespoons lemon juice (the juice of about 1 small lemon)
• salt and black pepper, to taste, if desired (optional, but I used about a 1/3 teaspoon of each)

Here's how to make it:

1. To the bowl of a food processor or immersion blender, add the cucumber, basil and scallions.
2. Process until just shredded and combined, about 30 seconds.
3. In a medium mixing bowl, add the Greek yogurt, garlic and lemon juice. Season with salt and pepper, to taste, if desired. Whisk to blend. (I prefer to use fresh-squeezed lemon juice, but in a pinch, you can use bottled lemon juice.)
4. Add the cucumber mixture and stir to combine.
5. Serve immediately, or refrigerate a bit before serving to allow flavors to meld. Garnish with fresh basil, if desired. Store leftovers in an airtight container in the refrigerator.
