This Mediterranean cucumber basil dipping sauce recipe is so fresh and creamy. It's made with farm-to-table ingredients that are as nutritious as they are delicious.
This easy six-ingredient cucumber basil sauce recipe features English cucumber and sweet Italian basil, two ingredients that smell as fresh as they taste. Here are the six wholesome ingredients you need for this gluten-free sauce recipe: an English cucumber (or your favorite cucumber), fresh basil, green onions, Greek yogurt, minced garlic and a lemon. All you do is blend the ingredients and serve (though you also can refrigerate it and let the flavors meld a bit until you're ready to serve). Such a simple and delicious vegetarian recipe!

Ingredients
- 1 cup cucumber (about 1 medium cucumber), in chunks
- 1/3 cup fresh basil leaves
- 2 scallions
- 1 cup plain Greek yogurt
- 1 teaspoon minced garlic
- 2 tablespoons lemon juice (the juice of about 1 small lemon)
- salt and black pepper, to taste, if desired (optional, but I used about a 1/3 teaspoon of each)
Here's how to make it:
- To the bowl of a food processor or immersion blender, add the cucumber, basil and scallions.
- Process until just shredded and combined, about 30 seconds.
- In a medium mixing bowl, add the Greek yogurt, garlic and lemon juice. Season with salt and pepper, to taste, if desired. Whisk to blend. (I prefer to use fresh-squeezed lemon juice, but in a pinch, you can use bottled lemon juice.)
- Add the cucumber mixture and stir to combine.
- Serve immediately, or refrigerate a bit before serving to allow flavors to meld. Garnish with fresh basil, if desired. Store leftovers in an airtight container in the refrigerator.
