With just four ingredients and in only about 25 minutes, you can have a flavorful vegetable dish that's equal parts nutritious and delicious. The tasty broccoli and mushrooms side dish recipe is super easy to make. Here are the four gluten-free ingredients you need for this Mediterranean vegetable recipe: fresh broccoli, fresh mushrooms, extra virgin olive oil and garlic powder. The vegetables are tossed in the olive oil and garlic powder then baked in the oven until crisp-tender. Simple and delicious!
This baked broccoli and mushrooms recipe can be served on its own or as a flavorful vegetarian side dish with just about any grain or protein for dinner. I served it with this easy slow-cooker peach barbecue chicken and it was the perfect accompaniment.

Ingredients
- 3 cups fresh broccoli (about 2 medium heads), chopped uniformly to cook evenly
- 8 ounces baby bella cremini mushrooms, sliced uniformly to cook evenly
- 3 tablespoons extra virgin olive oil
- 1/2 teaspoon garlic powder (or to taste)
- salt and pepper, to taste, if desired (optional, but I used about a 1/3 teaspoon of each)
Here's how to make it:
- In a baking pan or casserole dish, add the broccoli and mushrooms. Drizzle the olive oil and sprinkle the garlic powder over the vegetables. Season with salt and pepper, to taste, if desired. Toss to thoroughly combine. (For even roasting, ensure that your broccoli and mushrooms are sliced about the same size.)
- Spread coated vegetables evenly in a single layer in the baking pan.
- Bake in a preheated 400 degrees F oven for about 15 to 20 minutes, or until vegetables are browned and crisp-tender.
- Remove from oven and serve immediately. Store leftovers in an airtight container in the refrigerator and reheat in the microwave or oven.
