I make a lot of broccoli recipes because I absolutely love broccoli. As a kid, I remember being excited whenever a certain friend of mine invited me over for dinner because her mom loved broccoli, too. It became a joke that if my friend didn't finish her broccoli, she knew she could give it to me and I'd eat it for her!
Today, roasted broccoli recipes are a staple in my house. The crispy broccoli recipe is so delicious and super easy to make. Here are the five gluten-free ingredients you need for this tasty Mediterranean vegetable recipe: fresh broccoli, extra virgin olive oil, minced garlic, lemon juice and Parmesan cheese. The broccoli is tossed in the olive oil and garlic mixture then baked in the oven until crisp-tender. You then top it with the lemon juice and Parmesan before serving.
This baked broccoli recipe is perfect to serve as a nutritious side dish with just about any protein for dinner. I served it with this easy slow-cooker balsamic chicken and it was just delish.

Ingredients
- 3 cups fresh broccoli (about 2 medium heads), chopped
- 3 tablespoons extra virgin olive oil
- 2 teaspoons minced garlic
- 2 tablespoons lemon juice (fresh is best)
- 1/2 cup Parmesan cheese, shredded
- salt and pepper, to taste, if desired (optional, but I used about a 1/2 teaspoon of each)
Here's how to make it:
- In a baking pan or casserole dish, add the broccoli.
- Drizzle the olive oil and minced garlic over the broccoli. Season with salt and pepper, to taste, if desired. Toss to thoroughly combine.
- Spread coated broccoli evenly in a single layer in the baking pan.
- Bake in a preheated 425 degrees F oven for about 20 to 25 minutes, or until broccoli is browned and crisp-tender.
- Remove from oven and drizzle with lemon juice and sprinkle with Parmesan. Toss, if desired, then serve. (I prefer to use fresh lemon juice, but you can use bottled lemon juice if needed.)
- Sprinkle with additional Parmesan, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave or oven.
