To make this drool-worthy slow cooker recipe, you'll need to gather the following gluten-free ingredients: boneless/skinless chicken breasts (or thighs), peach preserves, barbecue sauce, Dijon mustard and fresh peaches. You mix up the sauce (including the peaches), pour it over the chicken in the slow cooker, then cook it up on low for about six hours. You shred the chicken then stir to combine before serving.
This moist and tender chicken is equally amazing for dinner served over rice, pasta or potatoes, or on top of your favorite rolls as a sandwich for a tasty lunch. We enjoyed it over rice as well as on top of Hawaiian rolls at our most recent family get-together and it was quickly devoured!

Ingredients
- 2 1/2 pounds boneless/skinless chicken breasts (or thighs)
- 1 cup barbecue sauce (store-bought or make your own BBQ sauce)
- 12 ounces (1 jar) peach preserves or jam (could also use apricot)
- 1 tablespoon Dijon mustard (or more, to taste)
- 3 cups fresh peaches, diced (peeled or unpeeled)
- salt and pepper, to taste, if desired (optional, but I used about a 1/2 teaspoon of each)
Here's how to make it:
- To your slow cooker, add the chicken. Season with salt and pepper, to taste, if desired. (I used about a 1/2 teaspoon of each. You can use chicken breasts or thighs for this recipe.)
- In a medium mixing bowl, add the barbecue sauce, peach preserves and Dijon mustard. Stir to combine. (Taste to see if you'd like any more mustard. If you don't have peach preserves, you also can use apricot.)
- Add the diced peaches and stir to combine. (You can peel the peaches or leave the peel on. I did about half and half.)
- Spread the peach mixture over the chicken in the slow cooker, ensuring that the chicken is covered in the sauce.
- Cover slow cooker with the lid and cook for about 6 hours on low. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Shred the chicken with two forks then stir to combine with the sauce.
- Serve immediately and enjoy! Store leftovers in an airtight container and reheat in the microwave.
