If you're looking to elevate your grilling this summer, stop right here. Top Chef Alum and Chef Partner CJ Jacobson of Aba Austin recommends an unexpected Greek yogurt marinade to elevate summer grilling and those July 4th recipes you plan to serve.
Greek yogurt makes an excellent marinade for chicken, shrimp, fish, really any protein that you would throw in the oven or on the grill. It maintains moisture and tenderizes the meat while staying light and avoiding using butter or oil. Chef CJ shares his recipe for an all-purpose Greek yogurt marinade. At Aba, the Grilled Chicken Kebab is a great example of a tender protein that utilizes a Greek yogurt marinade.

“When marinating lamb, add some fresh lime juice for a tangy kick. When marinating pork, you can add some dried oregano and a light splash of sherry vinegar," says Chef CJ.

Ingredients
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cayenne pepper
- 2 cups Greek yogurt
Here's how to make it:
- Whisk all the ingredients together.
- Store the marinade in an airtight container until ready to use.
- To use, cover desired protein in the marinade and refrigerate. Grill as desired.
