And, this creamy slow cooker Greek chicken recipe with a zesty lemon dill sauce is definitely one of those!
This is a simple chicken dinner that you can make with few ingredients and very little effort (thanks to the slow cooker). The flavor stars in this Mediterranean dish include lemon, garlic and fresh dill, which not only pack a flavor punch but also a nutritional boost (read about the health benefits of lemon and the health benefits of dill). Those tasty ingredients are added to Greek yogurt (learn about the health benefits of Greek yogurt) to create a creamy sauce that makes the chicken moist, tender and flavorful.
To make this gluten-free chicken recipe, here's what you need to gather: chicken breast, plain Greek yogurt, the juice and zest of a lemon, garlic, honey and fresh dill. You make the creamy sauce then put the chicken into the sauce in the slow cooker. A few hours later, your easy, nutritious and delicious chicken dinner is done.

Ingredients
- 1 cup low-fat plain Greek yogurt
- 1 lemon, juiced and zested (about 2 tablespoons juice and 2 teaspoons zest)
- 3 teaspoons minced garlic
- 1 tablespoon honey
- 2 tablespoons fresh dill, diced
- 2 pounds boneless/skinless chicken breasts
Here's how to make it:
- In a medium mixing bowl, add the Greek yogurt, lemon juice and zest, garlic, honey and dill. Season with sea salt and black pepper, to taste, if desired. Stir to blend.
- To your slow cooker, add the chicken. Spread 1/3 of the sauce over the chicken and toss to coat. Cover and refrigerate the remaining sauce (you'll need it later).
- Cover the slow cooker and set to cook on high for 4 hours. Chicken is done when it measures 165 degrees F on a food thermometer.
- Remove chicken from slow cooker and place it into a large mixing bowl. Shred chicken with two forks.
- Drain half of the liquid in the slow cooker, then return chicken to the slow cooker. Spread half of the remaining sauce over the chicken and toss to coat.
- Serve with the remaining sauce, either tossed to coat or on the side.
- Garnish with fresh dill or parsley, if desired. Store leftovers in an airtight container in the refrigerator or freezer. Reheat in the microwave.
