- 1/2 cup unsalted butter, at room temperature
- 3/4 cup light brown sugar
- 1/2 cup creamy peanut butter
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup overripe bananas (about 1 large banana), mashed
- 1 1/3 cups flour (all-purpose flour or gluten-free flour)
- 1 cup chocolate chips (semisweet or dark chocolate), optional
Here's how to make it:
- In a large mixing bowl, add the softened butter and brown sugar. Stir to thoroughly combine.
- Add the peanut butter, egg, vanilla, baking soda, salt and mashed banana. Stir to thoroughly combine.
- Add in the flour slowly, stirring to combine. Do not over-mix. (To make these cookies gluten-free, use gluten-free flour.)
- Fold in the chocolate chips, if using. (We prefer semisweet chocolate chips in this recipe.)
- Form the dough into balls, drop them onto parchment paper-lined baking sheets and flatten them a bit with a fork or spatula. (The number of cookies depends on the size of cookies you form. I made 24 cookies.)
- Bake in a preheated 350-degree F oven for about 10 to 12 minutes, or until lightly brown. Do not over-bake.
- Allow to cool a bit before serving. Store leftover cookies in an airtight container on the counter, or in the refrigerator or freezer.
