- 2 cups cottage cheese
- 6 eggs
- 1/2 cup almond flour
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- salt and pepper, to taste (optional, but I used about 1/4 teaspoon of each)
Here's how to make it:
- In a large mixing bowl, add the cottage cheese and eggs. Whisk vigorously to combine. (You also could whip the cottage cheese in a blender first before whisking it with the eggs.)
- Add the almond flour, baking powder and garlic powder. Add salt and pepper, to taste, if desired. Whisk to combine.
- Evenly distribute the mixture into 12 muffin cups that have been sprayed with cooking spray or lined with baking liners.
- Bake the egg bites in an oven that's been preheated to 350 degrees F until they're puffed up and golden, about 20 to 25 minutes.
- Allow the egg muffins to cool before removing from the pan and serving.
- Store leftovers in an airtight container in the refrigerator or freezer.
