Boursin cheese is one of my favorite stealth ingredients. Sure, you can serve it as a tasty appetizer alongside some crackers, but I use it more and more often as an ingredient that adds tons of creamy flavor to a variety of recipes. This cheesy high-protein casserole recipe with white beans and ground chicken is so good, and I give most of the credit to Boursin!
Boursin is a delicious herb cheese spread made with garlic, parsley and chives folded into Gournay cheese. Boursin was created by François Boursin, a young cheesemaker in France. For two years, he worked on his recipe inspired by fromage frais, a traditional French dish that blends garlic, fresh cream, soft cheese, herbs, salt and pepper. François debuted this decadent cheese in 1963 and it eventually became famous. If you've not yet used Boursin as an ingredient in your cooking, let me highly recommend it!

Here's the list of gluten-free ingredients for this one-pan dinner recipe: extra virgin olive oil, onion, bell peppers, ground chicken, Boursin cheese, plain Greek yogurt, white beans, diced tomatoes and shredded mozzarella cheese. You combine everything in the skillet on the stovetop then bake until it's golden brown and sizzling.
I served this easy, cheesy one-pan meal for dinner over white rice, but it would be amazing over your favorite pasta or all on its own. You just can't go wrong!

Ingredients
- 1 1/2 tablespoons extra virgin olive oil
- 1 cup onion, diced
- 1 cup yellow bell pepper, diced
- 1 pound ground chicken
- 5.2 ounces (1 package) Boursin garlic and herb cheese
- 1 cup plain Greek yogurt
- 15 ounces (1 can) white beans (such as cannellini beans), drained
- 15 ounces (1 can) diced tomatoes, drained
- 1 cup mozzarella cheese, shredded
- fresh parsley or other herb, for garnish (optional)
Here's how to make it:
- In a cast iron skillet over medium heat, add the olive oil, onions and peppers. (I used a yellow bell pepper, but you can use any color bell pepper you prefer.) Stir to combine. Add the ground chicken. Break it up and sauté with the vegetables until it's browned and cooked through. Remove from heat.
- Add the Boursin and the Greek yogurt. Season with salt and pepper, to taste, if desired. Stir until melted, well-blended and combined.
- Add the drained white beans and diced tomatoes. Stir to combine.
- Top with the shredded mozzarella.
- Bake at 425 degrees F for 15 to 20 minutes (ovens vary), or until cooked through, golden brown and sizzling.
- Allow to cool for a few minutes before serving. Garnish with parsley or other fresh herb, if desired. Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
