Ingredients
Chocolate Cake
- 1 cup Guinness beer or other stout beer
- 10 tablespoons unsalted butter (1 stick plus 2 tablespoons)
- 3/4 cup unsweetened cocoa powder
- 2 cups granulated sugar (superfine sugar if available, but I used regular granulated and it was great)
- 3/4 cup sour cream
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups all-purpose flour
- 2 1/2 teaspoons baking soda
Cream Cheese Frosting
- 1 1/4 cups powdered sugar
- 8 ounces cream cheese, at room temperature
- 1/2 cup heavy cream
Here's how to make it:
- Line a 9-inch springform pan bottom with parchment paper and then grease the pan sides and bottom with butter. Set to the side. Add the butter and Guinness to a large saucepan over medium-low heat. When butter finishes melting remove pan from the heat and turn off stove.
- Add the sugar and cocoa powder to the Guinness mixture and whisk to combine.
- Place the sour cream, eggs and vanilla in a medium bowl and combine well. Add in the Guinness mixture and blend well. Add the flour and baking soda and stir. For a gluten-free cake, use gluten-free 1:1 flour.
- Pour the batter into the greased pan and place in oven.
- Bake in a preheated 350-degree F oven for 45 to 55 minutes, or until a toothpick comes out with just a few crumbs. Place on a wire rack to cool completely while still in the pan.
- When cake is just about cooled prepare the frosting by combining the powdered sugar and cream cheese and mixing with an electric mixer or fork. Blend until smooth and then add the cream.
- When the cake is cooled, release it from the springform and place on a cake plate or platter. Frost just the top so that it looks like the foam on top of your Guinness. Enjoy! Store the cake in an airtight container to keep it fresh.
