Broccoli is one of my favorite vegetables to cook. The health benefits of broccoli make it a superfood, and you can't beat the taste. Growing up, we ate buttered broccoli or my grandma's broccoli with cheese sauce, so I'm always on the lookout for new broccoli recipes to help me get creative with this healthy vegetable.
This easy magic baked broccoli recipe is one of my new favorite ways to cook broccoli. The prep is quick and easy, and the broccoli comes out of the oven moist, but still crisp, and full of complementing flavors. So delicious!
To make this magic recipe you only need five simple ingredients. Here is your short shopping list: fresh broccoli florets, mayonnaise (the magic that makes it so moist), lemons for juicing, fresh garlic and garlic salt. I like to also add lots of fresh black pepper. Black pepper has health benefits, too.
This tasty, flavor-packed broccoli is wonderful as a side dish with pork, chicken, beef, seafood or lamb. I served mine with crunchy caramelized onion pork chops and a fresh salad with homemade salad dressing. Ingredients
- 1 head broccoli, cut into florets
- 1/4 cup mayonnaise
- 1 - 2 tablespoons lemon juice
- 4 cloves garlic, minced
- 1 teaspoon garlic salt (or to taste)
Here's how to make it:
- Stir together the mayonnaise, lemon juice, garlic and garlic salt in a mixing bowl. Season with black pepper, to taste. For some spice, you could add crushed red pepper flakes or ground cayenne.
- Add the broccoli florets and stir to coat.
- Pour the broccoli into a single layer on a baking sheet. I lined my baking sheet with aluminum foil for easier cleanup.
- Bake in a preheated 375-degree F oven for about 20 minutes, or until the broccoli is tender and beginning to brown. Store any leftover broccoli in an airtight container in the fridge and reheat in the microwave.
