Ingredients
- 1 pound fresh salmon filet
- 2 1/2 tablespoons whole grain mustard
- 2 1/2 tablespoons honey
- 2 tablespoons scallions, diced
Here's how to make it:
- Place the salmon filet, skin side down, in a casserole dish or baking pan (I lined mine with aluminum foil for easier cleanup). Season with sea salt and black pepper, to taste, if desired.
- In a small mixing bowl or large measuring cup, add the mustard and honey. Stir to combine. Give it a taste to see if you'd like to add any more honey or mustard to get the flavor balance that's right for your palate.
- Add the scallions and stir to combine.
- Spread the mixture over the salmon, ensuring it is evenly distributed. (You can reserve a small amount to drizzle over the salmon after it's done baking.)
- Bake the salmon in a preheated 375-degree F oven for about 15 minutes, or until desired doneness. Salmon is done when it reaches 145 degrees F on a food thermometer.
- Remove from oven and serve with your favorite vegetables or side dishes. Drizzle the reserved sauce over the salmon and/or garnish with additional diced scallions, if desired. Store leftovers in an airtight container in the refrigerator. Reheat in the microwave.
