During the busy week, easy chicken dinners are a must. Recently, I've rediscovered how much I love using ground chicken in simple weeknight dinner recipes. Ground chicken simplifies recipes because all you need to to is brown it, which takes very little time. I find that ground chicken is moister than ground turkey, so I've been using it more frequently to boost protein as well as flavor.
Cooking ground chicken in cast iron skillet casserole recipes has become one of my weekly go-to dinners. When you combine ground chicken with vegetables and cheese, chances are good you're in for a winner winner chicken dinner. This high-protein Mediterranean ground chicken skillet casserole recipe with spinach and tomatoes is amazing! And it fits really well into the Mediterranean Diet I'm trying to maintain.

Here's the wholesome list of ingredients for this one-pan dinner recipe: extra virgin olive oil, onion, yellow bell pepper, ground chicken, fresh spinach, low-fat plain Greek yogurt, shredded Parmesan cheese, shredded mozzarella cheese and fresh tomatoes. You combine the gluten-free ingredients in the skillet on the stovetop then bake until it's golden brown and bubbling.
I served this creamy high-protein meal for dinner over fresh gnocchi, but it also would be delicious over your favorite grain or pasta or all on its own. Easy and delicious!

Ingredients
- 1 1/2 tablespoons extra virgin olive oil
- 1 cup onion, diced
- 1 cup yellow bell pepper, diced
- 1 pound ground chicken
- 5 ounces fresh baby spinach
- 1 cup low-fat plain Greek yogurt
- 1 cup shredded mozzarella cheese
- 1 cup shredded Parmesan cheese
- 2 cups fresh tomatoes, diced
Recipe Notes
- I used a yellow bell pepper, but you can use any color bell pepper you prefer.
- You could use all Parmesan or all mozzarella, or use another favorite shredded cheese, if desired.
- You could add a fresh parsley garnish, if you like.
- Store leftovers in an airtight container in the refrigerator and reheat in the microwave.
Here's how to make it:
- In a cast iron skillet over medium heat, add the olive oil, onions and peppers. Stir to combine. Add the ground chicken. Break it up and sauté with the vegetables until it's browned and cooked through.
- Add the spinach and sauté until wilted, about 2 minutes. Remove from heat. Drain any excess liquid.
- In a large mixing bowl, add the Greek yogurt, mozzarella cheese, Parmesan cheese and tomatoes. Season with sea salt and black pepper, to taste, if desired. Stir to combine.
- Add the mixture to the skillet and stir until thoroughly combined.
- Bake at 425 degrees F for 15 to 20 minutes, or until cooked through, golden brown and bubbling.
- Allow to cool for a few minutes before serving. Garnish with fresh parsley, if desired.
