Ingredients
- 1 1/2 tablespoons extra virgin olive oil
- 1 cup onions, diced
- 1 cup green peppers, diced
- 14.4 ounces (1 can) sauerkraut, drained
- 8 ounces thousand island salad dressing
- 1 1/2 pounds boneless/skinless chicken breast, cut into pieces of equal size (I got 10 pieces)
- 7 slices Swiss cheese
Recipe Notes
- Be sure to drain the sauerkraut before using.
- You can use store-bought salad dressing or make your own homemade thousand island salad dressing.
- Garnish with fresh parsley, if desired.
- Store leftovers in an airtight container in the refrigerator.
Here's how to make it:
- In a large skillet or sauté pan over medium heat, add the olive oil, onions and green peppers. Sauté until crisp-tender, about 4 to 5 minutes.
- Add the sauerkraut and stir to combine. Remove from heat.
- Add the dressing to the vegetables and stir to combine.
- Arrange the chicken breasts evenly in a 13x9-inch baking dish that's been sprayed with cooking spray. Season with sea salt and black pepper, to taste, if desired.
- Evenly spread the vegetable mixture on top of the chicken breasts.
- Top with the cheese slices. (I tore one slice in half to make it fit.)
- Cover the pan with aluminum foil. Bake in a preheated 350 degree F oven for 20 minutes. Remove from oven and take off aluminum foil.
- Put uncovered casserole back into the oven until chicken is cooked through and casserole is golden brown, about 10 minutes. Chicken is done when it measures 165 degrees F on a food thermometer.
- Serve on its own or with your favorite sides. Garnish with fresh parsley, if desired.
