You combine the ingredients in the skillet on the stovetop then bake until it's golden brown.

Ingredients

• 1 1/2 tablespoons extra virgin olive oil
• 1 cup onion, diced
• 2 cups broccoli, chopped
• 1 1/2 pounds chicken thighs or breasts, chopped
• 1 cup low-fat plain Greek yogurt
• 1/2 teaspoon garlic powder
• 1 1/2 cups shredded cheddar cheese

Recipe Notes

• You can use chopped chicken thighs or breasts, or a combination (I used thighs).

• You can add a fresh parsley garnish, if desired.

• Store leftovers in an airtight container in the refrigerator and reheat in the microwave.

Here's how to make it:

1. In a cast iron skillet over medium heat, add the olive oil, onions and broccoli. Stir to combine and sauté for a couple of minutes.
2. Add the chicken and sauté with the vegetables until it's browned and cooked through. Remove from heat.
3. In a large mixing bowl, add the Greek yogurt, garlic powder and cheddar cheese. Season with sea salt and black pepper, to taste, if desired. Stir to combine.
4. Add the cheese mixture to the skillet and stir until thoroughly combined.
5. Bake at 425 degrees F for about 15 to 20 minutes, or until cooked through and golden brown. Allow to cool for a few minutes before serving. Garnish with fresh parsley, if desired.
