Broccoli is always in my produce drawer. The vegetable is my go-to side dish for so many meals, and you can't beat the health benefits of broccoli. While searching for new broccoli recipes, I stumbled across this simple four-ingredient recipe for garlic roasted balsamic broccoli. After a few tweaks, this broccoli recipe was the result. Delicious!
Not only did this roasted broccoli recipe have me at four ingredients, but I love cooking and finishing dishes with balsamic vinegar. Balsamic vinegar is an Italian vinegar that is rich and concentrated in flavor. Investing in a good balsamic vinegar is something I highly recommend.
To make this easy gluten-free vegetable recipe you will need to grab these simple, wholesome ingredients from your fridge and pantry: fresh broccoli, olive oil, fresh garlic and balsamic vinegar. The broccoli spears are tossed in the olive oil, garlic and vinegar, seasoned with a little salt and black pepper, then baked in a hot oven for about 15 to 20 minutes.
Pro Tip: A good-quality balsamic vinegar makes all the difference in the world. I used Ponti brand balsamic vinegar, but use your favorite.
This crisp, tasty broccoli goes so well with chicken, beef, pork, lamb or seafood. I served mine with shrimp skewers on a bed of basmati rice. The broccoli would be delicious served with that Thanksgiving turkey, too!

Ingredients
- 1 bunch broccoli, cut into spears
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 - 2 tablespoons balsamic vinegar
Here's how to make it:
- Put the broccoli onto a baking sheet. Sprinkle with the garlic, drizzle with the olive oil and season with salt and black pepper. (For easier cleanup, cover the baking sheet with aluminum foil or parchment paper.)
- Bake in a preheated 425-degree F oven for about 15 to 20 minutes.
- Remove to a serving plate and drizzle with the balsamic vinegar. Serve hot. Store any leftovers in an airtight container in the fridge. Reheat in the microwave.
