Pork chops are one of my favorite dinners. Pork is inexpensive, can be baked, fried, grilled, stir-fried, braised and cooked in a slow cooker, and is just downright delicious. My go-to is thin-cut, bone-in pork chops because of how fast they cook – and everything tastes better on the bone! This sugar and spice grilled pork chop recipe is sweet, a bit spicy and a wonderful meal on the weeknights and on weekends when you want to fire up the grill.
To make this easy pork dinner you will need just a few simple ingredients. Here is your shopping list: bone-in pork chops, brown sugar, garlic powder, chili powder, smoked paprika, salt, black pepper and olive oil. Coat the pork chops with the seasonings, drizzle with a little olive oil and grill until juicy and well seared.
Serve these sweet and spicy pork chops for dinner with your favorite side dishes. I served mine with cacio e pepe macaroni and cheese, steakhouse green beans and leftover zucchini cornbread casserole.

- 4 bone-in pork chops
- 2 tablespoons brown sugar
- 2 teaspoons garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
Recipe Notes
- The cooking time will vary depending on the thickness of your pork chops.
- I used bone-in, thin-cut pork chops, but you could use boneless pork chops or thick-cut chops. The size and thickness of the pork chops will affect cooking time.
- Adjust the seasonings to suit your tastes.
- Use tongs to turn the pork chops on the grill. Tongs is one kitchen utensil I could not live without.
- If you don't want to grill, you can cook these pork chops in a cast iron skillet or in a grill pan.
Here's how to make it:
- Combine all the seasonings. Season the pork with salt and black pepper to taste. Coat both sides of the pork chops with the seasonings and then drizzle with a little olive oil.
- Preheat the grill to medium-high. Cook the pork chops on one side until golden and seared on the bottom, about 3 minutes.
- Flip the pork chops over and continue to cook until cooked through, about 3 to 5 more minutes (145 degrees F internal temperature on a food thermometer).
- Remove from the grill and allow the pork chops to rest a minute before serving.
