After straightening up my pantry (you have to do that every now and then), I found two full bags of self-rising flour on the bottom shelf. Why? No idea. What I did know is that I needed some recipes using self-rising flour ASAP. With some overripe bananas staring at me on the counter, I decided to make a quick and easy golden banana bread recipe.
This moist banana bread shortcut recipe really is almost effortless. I had the batter mixed up in a couple minutes and only had to grab four ingredients. The brown sugar in this banana bread makes it golden not only in color, but it deserves a gold medal for its flavor. In my opinion, brown sugar is the queen (or king?) or the sugars and adds so much depth of flavor.
To make this banana bread you will need overripe bananas (check out the health benefits of bananas), brown sugar, self-rising flour and eggs. Mix it all together, spread into a pan and bake until golden and a toothpick comes out clean. If you can, let it cool before slicing.
Don't have self-rising flour? For every cup of self-rising flour, substitute 1 cup of all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon salt and 1/4 teaspoon baking soda.
Banana bread makes a wonderful dessert as-is or topped with whipped cream. You can also eat it as a quick snack, for breakfast or as part of a brunch spread. And, it goes without saying, that banana bread makes a nice food gift for friends, family, neighbors, coworkers and teachers.

Ingredients
- 4 ripe bananas
- 3/4 cup brown sugar, packed
- 1 1/2 cups self-rising flour
- 2 eggs
Here's how to make it:
- Mash the bananas in a mixing bowl.
- Add the remaining ingredients. (For a gluten-free banana bread, use gluten-free flour.)
- Stir until just combined. (You could add some chopped walnuts or pecans to the batter.)
- Spread the batter into a 8x4-inch loaf pan that's been lined with parchment paper.
- Bake in a preheated 350-degree F oven for about 50 to 55 minutes, or until it passes the toothpick test.
- Remove from the pan and allow to cool.
- Slice and enjoy! Store the banana bread in an airtight container to keep it fresh.
