Ingredients

• 1 pound (16 ounces) fresh salmon filet
• 2 1/2 tablespoons brown sugar
• 2 1/2 tablespoons Dijon mustard
• 1 1/2 teaspoons bourbon

Recipe Notes

• The ratio of brown sugar and Dijon mustard can be tweaked according to your taste preferences. If you'd like it a bit sweeter, add more brown sugar. If you prefer the spice of the mustard to shine through, add a bit more Dijon.

• You can add more or less bourbon, depending on your preferences. If you prefer no bourbon, leave it out.

• Store leftovers in an airtight container in the refrigerator. Reheat in the microwave.

Here's how to make it:

1. Place the salmon filet, skin side down, in a casserole dish or baking pan (I lined mine with aluminum foil for easier cleanup). Season with salt and pepper, to taste, if desired.
2. In a small mixing bowl or large measuring cup, add the brown sugar and mustard. Stir to combine. Add the bourbon and stir to combine.
3. Spread about three quarters of the glaze evenly over the salmon then set the rest aside.
4. Bake the salmon at 400 degrees F for about 12 to 15 minutes, or until desired doneness. Salmon is done when it reaches 145 degrees F on a food thermometer. Remove salmon from oven.
5. Spread remaining glaze over the salmon, if desired, and serve.
