To make this Mexican-inspired chicken dinner, you will need the following ingredients: boneless chicken breasts, yellow onion, cooking oil, onion powder, chili powder, garlic powder, ground cumin, sea salt, black pepper, low-sodium chicken broth, diced tomatoes, black beans, corn, brown rice or quinoa and cheese. It's gluten-free goodness!

Ingredients

• 1 1/2 - 2 pounds boneless, skinless chicken breasts
• 1 small yellow onion, diced
• 2 tablespoons avocado oil or olive oil
• 3 teaspoons onion powder
• 3 teaspoons chili powder
• 2 teaspoons garlic powder
• 3 teaspoons ground cumin
• sea salt and freshly ground black pepper, to taste
• 3 cups organic, low-sodium chicken broth
• 15 - 16 ounces (about 2 cups) diced tomatoes, drained (use fresh, jarred or canned tomatoes)
• 1 1/2 cups cooked black beans (rinsed well if using canned)
• 1 cup frozen organic corn
• 2 1/2 cups cooked brown rice or quinoa
• 1/3 cup shredded colby-jack cheese (optional)

Recipe Notes

• Try this chicken recipe with ground chicken.

• For even more flavor, stir in some fresh cilantro and fresh jalapeno.

Here's how to make it: 

1. Place chicken and diced onion in a slow cooker. Pour in broth, tomatoes, oil and seasonings. Cook on low for about 5 hours.
2. Remove chicken from slow cooker.
3. Stir precooked rice or quinoa, corn and black beans into the hot liquid remaining in slow cooker. Let cook an additional 10 minutes on high.
4. In the meantime, quickly chop or shred chicken. Add chicken back in, cook for 10 minutes on high, or just until chicken is hot.
5. Serve with fresh diced tomatoes, plain Greek yogurt, green onion, diced avocado or guacamole. Top with cheese, if desired.
