To make this baked pork tenderloin recipe you will need a pork tenderloin, baby potatoes (Yukon gold, red, white or fingerlings), soy sauce, honey, olive oil, orange juice, Dijon mustard, fresh garlic and fresh rosemary. The pork does not require any marinating time, which is a plus.

Ingredients
- 1 pork tenderloin (about 1 pound)
- 1 pound baby potatoes, cut in half if large
Sauce
- 1/4 cup soy sauce
- 3 tablespoons honey
- 2 tablespoons olive oil
- 2 tablespoons orange juice
- 2 tablespoons Dijon mustard
- 4 garlic cloves, minced
- 1 tablespoon minced fresh rosemary
Here's how to make it:
- In a shallow dish or food storage bad, combine all the sauce ingredients. Season with salt and black pepper. Put the pork and potatoes into the marinade. Toss or stir to coat the meat and potatoes thoroughly. (If you can't find fresh rosemary, you can use dried rosemary. You can use low-sodium soy sauce, gluten-free soy sauce or tamari.)
- Place the pork tenderloin into a baking pan and surround with the potatoes. Pour in all the sauce. (To help the sauce get into the meat, you can make shallow slits along the top. Be careful not to cut all the way through. There is enough sauce to cook two pork tenderloins at the same time, if desired.)
- Bake in a preheated 350-degree F oven for about 40 to 45 minutes, or until meat is cooked through and potatoes are tender. (Pork is cooked at 145 degrees F.)
- Let the tenderloin rest about 10 minutes before slicing and serving with the potatoes. For a pretty presentation, garnish with more rosemary and fresh orange slices. Store any leftovers in an airtight container in the fridge and reheat in the microwave.
