Roasted potatoes always bring a smile in my house. After making a hash brown casserole recipe, I had some chive and onion cream cheese leftover in the fridge, which was the inspiration for these crispy and creamy chive roasted potatoes. These potatoes are crispy on the outside, creamy on the inside and have a oniony cheese sauce. A cheese sauce that you didn't have to make from scratch! That's a win-win.
To make this potato recipe you only need four simple ingredients. Here is your short shopping list: baby potatoes, chive and onion cream cheese, garlic powder and fresh chives. The only prep is cutting the potatoes in half and mincing the chives. The potatoes bake up in about 30 minutes in the oven.

- 3/4 - 1 pound baby potatoes, cut in half
- 2 tablespoons chive and onion cream cheese
- garlic powder, to taste
- 1 tablespoon chopped fresh chives, minced

- You can use baby Yukon gold, red, white or even fingerlings for this recipe. If you can't find baby potatoes, cut regular potatoes into large chunks.
