These roasted potatoes are hot! Literally. The potatoes are baked at a high temperature – 450 degrees F. You may think that's too hot for small Yukon gold potatoes, but think again. These roasted potatoes come out of the oven crisp on the outside and soft, creamy and melty on the inside. They are absolutely delicious.
Here is your shopping list for these 450-degree baked potatoes: small Yukon gold potatoes, butter, olive oil. fresh rosemary and broth. The potatoes are tossed in melted butter, olive oil, salt, black pepper and chopped fresh rosemary, then baked for 15 minutes. Flip them over and continue to bake another 15 minutes. One cup of broth is poured into the pan and the potatoes bake another 15 minutes or until it evaporates. The potatoes are now ready to be eaten as a side dish with your favorite protein.
You could also toss these potatoes into a main dish salad with sliced steak and your favorite homemade salad dressing. Or dip them into your favorite dipping sauce as an appetizer.

Ingredients
- 2 pounds small Yukon gold potatoes, cut into 1-inch thick rounds
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh rosemary
- 1 cup broth (beef, chicken or vegetable)
Recipe Notes
- Use whatever fresh herbs you have on hand. If you don't have fresh herbs, dried herbs would work.
- Small red potatoes, white potatoes or fingerlings would be good substitutes for the Yukon gold.
- I used beef broth, but chicken broth or vegetable broth would work just as well.
Here's how to make it:
- Melt the butter in a large mixing bowl. Add the olive oil and rosemary. Season with salt and pepper.
- Add the potatoes and toss to coat.
- Put the potatoes into a 13x9-inch baking pan in a single layer. Pour any remaining butter-olive oil over the top.
- Bake in a preheated 450-degree F oven for 15 minutes. Flip the potatoes over. Continue to bake another 15 minutes.
- Pour the broth around the potatoes. Bake another 15 minutes or until broth as evaporated.
- Sprinkle with additional chopped rosemary, if desired, and serve.
