Ingredients
- 1 tablespoon extra virgin olive oil
- 1 1/2 cups grilled vegetables (I used asparagus, onions and yellow bell peppers)
- 4 eggs
- 1/2 cup feta cheese, crumbled
Recipe Notes
- It took me about 12 minutes to make the grilled vegetables. Here's the easy recipe.
- I used a yellow bell pepper, but you can use any color bell pepper you prefer.
- Garnish with a sprinkling of fresh herbs, such as parsley, if desired.
- Store leftover eggs in an airtight container in the refrigerator and reheat in the microwave.
Here's how to make it:
- In a small mixing bowl, whisk the eggs. Season with salt and black pepper, to taste, if desired. Set aside.
- Add the olive oil to a small nonstick skillet or sauté pan over medium heat. Add the grilled vegetables.
- Pour the egg mixture into the pan and stir to combine with the vegetables. Using a wooden spoon or spatula, scramble the eggs for about a minute.
- Add the feta cheese crumbles and stir to combine. Continue scrambling until eggs are done to your preference, about 3 minutes.
- Serve eggs on their own, or with a bagel, English muffin, toast or fruit. Garnish with fresh parsley, if desired.
