Here's how to make it:
- Put the buttermilk and gochujang into a food storage bag or shallow dish. Add the chicken and squish around to make sure they are covered in the marinade. Season with salt and black pepper, if desired. Refrigerate for 30 minutes or up to 8 hours.
- Heat the grill to medium-high. Pull the chicken from the marinade with tongs and place on the hot grill.
- Cook, flipping often and basting with remaining marinade, until chicken is cooked through and slightly charred, about 8 to 10 minutes, depending on thickness and size of thighs.
- Serve the chicken with your desired side dishes.
