Cheesy Spinach & Bacon Quiche Recipe: We're Thinking Breakfast for Dinner Breakfast Dinner Lunch Brunch

Quiche is an often overlooked meal to serve for breakfast, brunch, lunch or even dinner. Quiche is a French dish that is a savory tart baked in a pie shell, though there are crustless quiche recipes out there, too. Quiche can be served hot out of the oven, warm or even cold.

This cheesy spinach and bacon quiche recipe is a hearty, comforting meal the whole family should love. The quiche recipe has minimal ingredients and bakes up in about 45 minutes, giving you time to do other things or prepare a salad or fresh vegetable as a side dish.

To make the quiche you will need bacon, onion, baby spinach, half and half, eggs, cheese and a pie crust. You can use a store-bought pie crust or make a homemade pie crust. Your choice. This egg recipe is delicious for breakfast or brunch with a side of fruit, or for lunch or dinner with your favorite side dishes.

Ingredients

• 6 slices bacon
• 1/2 cup chopped onion
• 2 cups baby spinach 
• 1 1/4 cups half and half
• 5 large eggs 
• 1 1/4 cups shredded cheese
• 1 pie crust, baked

Recipe Notes

• Swiss, fontina, gruyere, gouda, Monterey Jack, cheddar and mozzarella work well for this recipe, but use your favorite cheese.

• You could use turkey bacon for this recipe.

• Not a fan of spinach? Use kale or your favorite greens. Not a fan of bacon? Use pork breakfast sausage or Italian sausage.

• Store any leftovers covered in the fridge.

• Quiche freezes well, so make an extra one for later.

Here's how to make it: 

1. Cook the bacon in a skillet. Remove the bacon, crumbled and set aside.
2. To the bacon grease, add the onion and cook until soft, about 2 minutes. Add the spinach and cook about 1 more minute. 
3. Put the shredded cheese, onion, spinach and bacon onto the bottom of the baked pie crust. 
4. Whisk together the eggs and half and half in a mixing bowl (you could also blend them together in a blender). Add salt and black pepper, to taste. 
5. Pour the egg mixture into the pie crust. 
6. Bake the quiche in a preheated 350-degree F oven for about 40 to 45 minutes, or until the eggs are set. (Cover the edges of the pie crust with foil if it starts getting too brown.) Remove from the oven and allow to cool at least 10 minutes before serving. 
7. Combine the eggs, half and half, salt, and pepper in a blender, then pour the egg mixture into the pie.
