Yum! I've got farmers market tomatoes here that I've just been tossing into my salads. Love this creative way to use them!

There's so much to love about the farmers market, and the vine-ripe tomatoes are among my favorites. I will be making this recipe again soon, Donna John !

This sounds delicious! We've got some tomatoes coming off the vine now, so I'll see if we can whip this up soon.

It was really good, Jacob Foster ! I love using vine-ripe tomatoes and this recipe is one of my favorite ways. I hope you enjoy it with your home-grown tomatoes!

I can't wait to make this! I want to be sure I have the right amount of tomatoes. How big are your 5 tomatoes (or how much did they weigh)? I have two really large tomatoes and I'm wondering if that's enough. Also, how thin/thick did you slice them and are they in a single layer or 2-3 tomatoes deep? Thank you so much.

Hi, danilevitt ! I had four medium tomatoes and one larger one, which left me with some overlap. I think if I had five medium tomatoes, there would have been very little overlap, which is why I wrote it up in the recipe that way (as 5 medium). But even with the overlap, the tomatoes cooked fine and the recipe came out great. I sliced the tomatoes into about 1/4- to 1/3-inch slices. If you have two very large tomatoes, it might be enough (you could cut the slices in half, to make it easier to lay them out, maybe). Or, if you're worried about it, you could try cutting the recipe in half and using a smaller baking dish (such as an 8x8). Please let me know how it turns out for you!

Thank you! I just made it and it's great. It will make a wonderful pot luck or brunch dish. I used 2 and half large tomatoes, just over 2 lbs total, although 2 would have been enough.

Great to hear that! Thank you for letting me know, danilevitt . I appreciate the feedback and am so glad this recipe turned out well for you! 🍅

The list of ingredients did not list eggs. However in step 6 of the instruction, it mentions eggs. How many eggs do I use for this recipe?
Elisa Schmitz
Hi Sanaye Muranaka ! The eggs are listed in the ingredients (between the garlic and the mozzarella cheese): 2 eggs, lightly beaten. I hope you enjoy this recipe!
