Ingredients

• 3/4 cup Malt-O-Meal (original flavor)
• 1 1/4 cups flour
• 1/2 cup granulated sugar
• 3/4 cup milk
• 1/4 cup vegetable oil
• 1 egg
• 1 tablespoon baking powder
• large pinch of salt
• 1 1/2 teaspoons vanilla extract
• 1/2 - 1 cup chocolate chips

Recipe Notes

• You could omit the chocolate chips and use raisins, dried cherries, dried blueberries or dried cranberries instead.

• Store the muffins in an airtight container to keep them fresh.

Here's how to make it: 

1. Put all the ingredients into a mixing bowl. Stir until just combined. 
2. Spoon the mixture into greased or lined muffin tins, filling about 3/4 full. 
3. Bake in a preheated 400-degree F oven for about 18 minutes, or until a toothpick comes out clean.
