It's true that peaches are the stars of summer. There's nothing quite like ripe and juicy peaches, so we have to enjoy them while we have them.

That's why I decided to make a dessert that's a cross between a peach cobbler and a peach crisp. What lands this easy peach dessert somewhere between a cobbler and a crisp is the topping. It's not really cake-like and not quite biscuit-like, but rather crumble-like in consistency. To make this simple and sweet peach cobbler recipe, here's what you need to gather: fresh peaches, lemon juice, flour, light brown sugar, cinnamon, baking soda, salt, butter and vanilla extract. The vanilla ice cream is optional (but, if you ask me, it's really not optional)! You place the peaches in a baking pan then drizzle them with lemon juice. Next, you make the crumbly dough then layer it on top of the peaches. Then the cobbler gets baked until it's golden and juicy. So easy and delicious!

Ingredients

• 6 ripe peaches, cut into chunks
• 2 1/2 teaspoons fresh lemon juice
• 1 cup flour
• 1/2 cup light brown sugar
• 1/2 teaspoon cinnamon
• 1/3 teaspoon baking soda
• 1/3 teaspoon salt
• 1/3 cup unsalted butter, melted
• 2 teaspoons vanilla extract
• vanilla ice cream, for serving (optional)

Recipe Notes

• You can use all-purpose flour or gluten-free flour. I used GF 1:1 flour.

• When it comes to lemon juice, fresh is always best. In a pinch, you can use bottled lemon juice.

• Some people like to peel their peaches, but there really is no need. Simply cut them into chunks using a sharp knife.

• Store any leftovers in an airtight container in the refrigerator and reheat in the microwave.

Here's how to make it:

1. Grab a 13x9-inch baking pan or casserole dish and spray it with cooking spray. Evenly distribute the peaches on the bottom of the dish.
2. Drizzle the lemon juice over the peaches, ensuring that the peaches are covered in the juice.
3. In a medium mixing bowl, add the flour, brown sugar, cinnamon, baking soda and salt. Stir to combine. Add the melted butter and vanilla. Stir to combine until you have a crumbly dough.
4. Evenly distribute the dough over the peaches, ensuring that all the peaches are covered in the dough.
5. Bake at 400 degrees F for 20 to 30 minutes, or until topping is golden brown and peaches are juicy.
6. Serve warm on its own or with a scoop of vanilla ice cream (highly recommended)!
