One of my all-time favorite actors is Joan Cusack. My kids grew up with Toy Story, so I was thrilled when Joan Cusack made her way back to the big screen with her role as the cowgirl Jessie in Toy Story 3. That, of course, not only made me want to go see a cartoon again, but search out some of Joan Cusack's recipes and make them at home.

In 2009, Joan shared her oatmeal chocolate chip cookies recipe on the Today show to help support pediatric cancer research. The delicious cookie recipe is easy to whip up and results in chewy cookies that will make both oatmeal cookie and chocolate chip cookie lovers happy.

To make Joan Cusack's cookie recipe you will need to gather the following ingredients from your fridge and pantry: unsalted butter, granulated sugar, light brown sugar, eggs, vanilla extract, flour (all-purpose or gluten-free flour), baking soda, salt, old-fashioned rolled oats (read about the health benefits of oats) and semisweet chocolate chips.

These moist, chocolatey homemade cookies are delicious for dessert after dinner or as a sweet, energizing snack during the day. (You could even pack some in your purse when you go see the movie. Shh. I won't tell.)

Ingredients

• 1 cup (2 sticks) unsalted butter, softened
• 1 cup granulated sugar
• 1 cup light brown sugar, packed
• 2 large eggs
• 1 teaspoon vanilla 
• 2 cups all-purpose flour (or 1:1 gluten-free flour)
• 1 teaspoon baking soda
• 1 teaspoon salt
• 2 cups old-fashioned rolled oats
• 2 cups semisweet chocolate chips

Here's how to make it: 

1. In a mixing bowl, cream together the butter, granulated sugar and brown sugar until light and fluffy. 
2. Add the eggs, one at a time, and beat well. Stir in the vanilla.
3. In another mixing bowl, whisk together the flour, baking soda and salt. (For gluten-free cookies, use 1:1 gluten-free flour.)
4. Combine the wet ingredients with the dry ingredients. Do not overmix. 
5. Fold in the rolled oats and chocolate chips.
6. Drop rounded tablespoons full of the dough onto baking sheets. (The number of cookies you get will depend on how big you make them.)
7. Bake in a preheated 350-degree F oven for 10 to 12 minutes, or until the edges turn golden brown. Let the cookies cool for a few minutes on the baking sheets before removing to cool completely. Store the cookies in an airtight container to keep them fresh.
