My normal breakfast of yogurt or cottage cheese with fruit, granola and nuts is just so easy to throw together after my workout at the gym. But everyone needs a change of pace every once in a while. So, when I saw this summer strawberry baked oatmeal recipe on TwoPeasAndTheirPod.com, I knew I had to give it a try.

Once the strawberry oatmeal was baked, I sliced a square and it made the perfect breakfast or brunch. And this strawberry baked oatmeal was just as filling as a bowl of oatmeal. However, I can keep a pan of it in the fridge and it's ready to eat for six days straight. 

To make this fresh strawberry baked oatmeal recipe you will need the following ingredients: old-fashioned rolled oats, baking powder, salt, fresh strawberries, milk, butter, eggs, maple syrup and vanilla extract.

If you add a drizzle of maple of syrup or honey and a scoop of ice cream, this tasty baked oatmeal could also be dessert!

Ingredients

• 2 cups old-fashioned oats
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 2 cups chopped fresh strawberries (divided)
• 1 1/2 cups milk
• 1/4 cup unsalted butter, melted
• 2 large eggs
• 1/4 cup maple syrup
• 1 1/2 teaspoons vanilla extract

Recipe Notes

• You can use any kind of milk, including nut milks. I used leftover heavy cream and whole milk.

• We had a small bottle of vanilla-infused maple syrup in the fridge, which had been a gift. I subbed that for the regular maple syrup, and it was a great choice!

• I added a dollop of yogurt and a sprinkle of nuts on top.

• Next time, I’ll add nuts to the batter.

Here’s how to make it:

1. Combine the oats, baking powder and salt in a large bowl.
2. In a blender, mini chopper or food processor, blend 1 cup of the strawberries and the milk until smooth. The result will be a strawberry milk.
3. Pour the strawberry milk over the oat mixture and stir.
4. In a separate bowl, mix the melted butter, eggs, maple syrup and vanilla extract.
5. Add these wet ingredients to the oat mixture and stir until well combined.
6. Fold in the remaining 1 cup of chopped strawberries.
7. Prepare an 8x8-inch pan with nonstick cooking spray. Spoon the mixture into the pan and top with sliced strawberries.
8. In a preheated 350-degree F oven, bake for 45 minutes or until lightly browned.
9. Remove from the oven and let cool in the pan for 5 minutes. Cut into squares and serve.
